Since Christmas is only days away, and all we’ve been talking about lately is the Christmas menu, we‘re trying to stay light before the big day. Here’s a quick and healthy lunch idea if you have some leftover roast beef in the fridge. Happy Cooking!
Italian ciabatta bread
A few thin slices of roast beef
A handful of arugula leaves
¼ cup of pine nuts, toasted
½ cup freshly grated Parmesan cheese
¼ cup extra virgin olive oil
1 Tbsp mustard
Salt & pepper
For the arugula pesto:
Blend arugula, pine nuts, Parmesan and oil in a food processor. Season to taste with salt & pepper.
Slice the ciabatta, drizzle with olive oil and toast in a 200˚C oven for 5 minutes. Spread a thin layer of mustard on the bread and place the roast beef slices on top. Drizzle pesto over the beef and ENJOY!!
PS. This might not seem like the most dietetic of meals, but here are a few facts that might change your mind. Mustard is a low-fat and flavorful addition to many foods. It’s a great alternative to other high-calorie condiments like mayonnaise, ketchup, BBQ sauces, etc…
As for the arugula, which is an incredibly rich source of vitamins, minerals, iron and copper, cancer-combating elements and much more….apparently it also MAKES YOU SEXY!! Ancient Romans considered it a powerful aphrodisiac and used it as a sensual enhancer throughout many regions of the world. And if you’re feeling daring, try making a love potion with arugula, chicory and lavender. You never know, it might work!!!
